BlackStar is about providing high-quality, grass-fed, grass-finished, pasture-raised Wagyu beef. Our herd is completely free from harmful additives and hormones; it is also free range as our cattle graze over 16 acres. Our Organic land management practices create the most nutrient dense diet for the cows to graze on as well as keep a safe environment to continue the legacy of the land. We believe these intangible factors make our beef the most high-quality Wagyu beef available.
The term “WAGYU”—properly pronounced, “waa-gyew”—literally means “Japanese cow” in Japanese. “Wa” means Japanese and “gyu” means cow. Wagyu were raised in Japan as beasts of burden for more than 2,000 years before they were consumed for meat in Japan starting around 1867 at the beginning of the Meiji Restoration when a long-standing ban on eating meat in Japan was lifted. Wagyu are genetically predisposed to produce excellent quality beef. Wagyu cattle arguably produce the best quality beef in the world—a beef product that is tender and highly marbled. Wagyu beef is also healthier than beef from other breeds of cattle due to a higher ratio of monounsaturated fatty acid as compared to saturated fatty acid.
